I've got a lovely bunch of coconut products

    and I mixed them all up for a snack.

    coconut flour, flakes, oil in a bowl, with an egg (blasphemy!), and some cinnamon. ate it with a spoon.

    I’m reading a book right now called Favorite nature stories. Here is an excerpt on the coconut tree, nature’s ‘supermarket’ —

    “When wind stirs the feathery coconut fronds, they rustle overhead with a drowsy pleasant murmur and make ever changing patterns against the sea or sky. When the air is still, the palms become tall ballet dancers, arms poised in a swirl of graceful curves. A tropical sunset with white beach and blue sea is always a scene of great beauty, but doubly so when coconut palms frame the picture. No tree on earth is more useful, none more lovely.”

    I would like to know how you are having those eggs.  But I’m here making dandelion fritters fried in coconut oil.  :d

    Well now I have to go pick some dandelions. I know just the spot. And I’ll replace the flour with coconut flour. What a great recipe, though!
