    Olive, garlic and lemon chicken and for the second part of the baking I top it with potatoes cut to small cubes with herbs.

    My favorite paleo recipe is my regular breakfast shake:

    cup of cashew milk
    2 ripe bananas (the riper the better)
    1 raw egg
    1 big hunk of ginger
    1 tray of ice

    Blend on high in the Vitamix

    You can also throw in fruit or spinach, or both.

    Oh, I have this big frying pan. Ready?

    Some fat, butter, oh, coconut oil….sigh

    Gimme gimme ground beef, and onion, chopped.

    Let it rain spices: cayenne, chili powder, garlic powder, salt, pepper, anything. I don’t care. Let it rain.

    Another wallop of butter: add chard (or green).

    as it all simmers, dress it with hot sauce.

    One big whip of sour cream and a ‘cado on the side. You’re golden. Add eggs for an every meal experience…haha.

    ground beef is replaceable with any meat. this is my paleo bachelor pad nightly staple.

    I cooked this recipe tonight!

    ingredients:

    2 lbs boneless chicken thighs

    3 bell peppers any color

    1 large onion

    Southwestern dry rub

    directions:

    chop the onions and peppers (like you would if making fajitas)

    after you have mixed the dry rub ingredients together, put in bottom of large mixing bowl and coat chicken thighs

    cook the chicken thighs on the grill, then bring them in and cut thighs into strips

    coat a large frying pan  w/ coconut oil and add onions and peppers, cook until tender, then add the sliced chicken thighs.  Makes a nice stir-fry!
